First Recipe Contest Winner

Our first winner in the recipe contest is the beautiful “Greens and Legumes Soup”. What we loved about this recipe is that it’s a great mix of some fresh ingredients, healthy and comforting, has wonderful color, and can be made in a big batch to share. There are 8 ingredients that can be purchased at Gallucci’s to recreate this wonderful recipe. Posted below is the recipe and a pic, congratulations to our first winning submission! We got a week behind sorting through submissions, so there will be another winner announced tomorrow.

Make sure the recipe includes at least two items from Gallucci’s. :-)

“Greens & Legumes Soup”

3 cloves of garlic
1 small yellow or white onion
3 carrots
3 Tbsp of extra virgin olive oil
2-15 ounce cans of tomato sauce
1-28 ounce can of chopped (diced) tomatoes
32 ounces of vegetable broth (stock)
1-14 ounce can of garbanzo (chickpeas) beans, drain and rinse
1-14 ounce can of cannelini (white kidney) beans, drain and rinse
1 bunch of cleaned, chopped escarole or Swiss chard or container of power greens
Salt and pepper, 1/4 teaspoon each
Locatelli cheese for serving garnish

Use a 10 quart or larger pot
Chop garlic, onion and carrots and simmer in EVOO in pot until soft
Add vegetable stock and simmer
Add tomato sauce and chopped tomatoes and continue to simmer
Add both cans of beans and continue to simmer
Add salt and pepper
Add greens for the last few minutes

Prep time 10 minutes, cooking time 20 minutes, total time 30 minutes
Serve topped with grated Locatelli cheese!
